Olive and Goat Cheese Crostini
"Scrimp on time without sacrificing flavor with these super simple, tasty crostini. Goat cheese spread on toasted baguette slices, topped with black olives and paprika, make for a perfect last minute appetizer or anytime snack." Original recipe yield: 20 pieces.
INGREDIENTS:
1 French baguette, sliced diagonally into 20 pieces
5 1/2 ounces goat cheese
1 teaspoon oregano, chopped
1 (6 ounce) can Lindsay® Black Ripe Pitted Olives, chopped
Paprika to taste
DIRECTIONS:
Spread baguette slices onto a large baking sheet and bake in a 375 degree oven for 5 to10 minutes until lightly toasted. Set aside.
Combine goat cheese, olives and oregano in a small mixing bowl. Spread mixture on top of each crostini. Garnish with a light dusting of paprika just before serving.
