Eagle Salad
"Don't worry! It's not really eagle! This is an easy elbow macaroni salad that my Aunt makes. Everybody LOVES it!" Original recipe yield: 5 servings.
INGREDIENTS:
2 cups elbow macaroni
2 tablespoons mayonnaise
1 small onion, chopped
1 (6 ounce) can tuna packed in oil, drained
DIRECTIONS:
Bring a pot of lightly salted water to a boil. Add macaroni, and cook until al dente, about 8 minutes. Drain, and rinse with cold water to chill. Set aside to dry.
In a medium bowl, mix together the cooled macaroni noodles, mayonnaise, onion and tuna. Taste and add more mayonnaise if desired. Refrigerate until serving.
