Peachy Ginger Soup
"A zippy peach soup that is perfect for a hot summer evening. For a spicier soup, use fresh ginger root." Original recipe yield: 6 servings.
INGREDIENTS:
3 1/2 pounds fresh peaches - peeled, pitted and chopped
1 teaspoon ground ginger
1 1/3 cups heavy cream
2 tablespoons rum
DIRECTIONS:
Puree the peaches and ginger together in a food processor or blender. Stir in heavy cream and rum. Chill. Serve cold.
