Tortellini with Pesto and Sun-dried Tomatoes
"Garlicky pesto and rich sun-dried tomatoes make this tortellini irresistible. This is an easy dish for a picnic or potluck. A salad and loaf of bread will complete this meal." Original recipe yield: 4 servings.
INGREDIENTS:
1 pound BUITONI® Three Cheese Tortellini
1/2 cup BUITONI® Family Size Pesto Sauce
1/4 cup sun-dried tomatoes, drained and chopped
1/2 bunch basil, chopped
1/2 cup grated Parmesan cheese
DIRECTIONS:
Cook tortellini according to package directions. Drain and toss with pesto, sun-dried tomatoes, chopped basil and cheese. Serve hot or at room temperature.
