Sunset Patio Pasta
"Sunset Patio Pasta combines the great taste of grilled vegetables with seasoned pasta for the perfect summertime side dish." Original recipe yield: 8 servings.
INGREDIENTS:
8 ounces penne pasta
4 cups assorted vegetable pieces (such as zucchini, yellow squash, bell pepper, mushrooms and onions)
4 tablespoons olive oil, divided
3 teaspoons McCormick® Grill Mates® Montreal Chicken Seasoning, divided
2 tablespoons balsamic vinegar
DIRECTIONS:
Cook pasta according to package directions.
Toss vegetables with 1 tablespoon oil and 1 teaspoon Grill Mates® Montreal Chicken Seasoning. Place vegetables in a grill basket or on skewers; grill until tender, about 8-10 minutes, turning frequently.
Combine balsamic vinegar, remaining oil and remaining Grill Mates® Montreal Chicken Seasoning in a large bowl. Add cooked pasta and vegetables and toss well. Serve warm or chilled.
