Coconut Puffs
"I don't know how to categorize this recipe. My family usually enjoy them for breakfast or tea. These puffs can be dipped in honey or maple syrup if you like them sweeter." Original recipe yield: 4 servings.
INGREDIENTS:
3/4 cup all-purpose flour
1/2 cup self-rising flour
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1/4 cup white sugar
1 1/2 cups coconut milk
1 quart oil for frying
DIRECTIONS:
In a medium bowl, mix all-purpose flour, self-rising flour, cinnamon, cardamom and sugar. Stir in coconut milk until lumps disappear.
Heat oil in deep-fryer or wok to 375 degrees F (190 degrees C). Drop batter by tablespoons into hot oil. Fry until golden brown. Remove with a slotted spoon and drain on paper towels.
Editor's Note:We have determined the nutritional value of oil for frying based on a retention value of 10% after cooking. The exact amount may vary depending on cook time and temperature, ingredient density, and the specific type of oil used.
