Carrot Salad
"This is a crisp and sweet carrot salad." Original recipe yield: 8 servings.
INGREDIENTS:
4 carrots, shredded
1 apple - peeled, cored and shredded
1 tablespoon lemon juice
2 tablespoons honey
1/4 cup blanched slivered almonds
salt and pepper to taste
DIRECTIONS:
In a bowl, combine the carrots, apple, lemon juice, honey, almonds, salt and pepper. Toss and chill before serving.
