Carrot Salad

"This is a crisp and sweet carrot salad."  Original recipe yield: 8 servings.

INGREDIENTS:

  • 4 carrots, shredded
  • 1 apple - peeled, cored and shredded
  • 1 tablespoon lemon juice
  • 2 tablespoons honey
  • 1/4 cup blanched slivered almonds
  • salt and pepper to taste

    DIRECTIONS:
  • In a bowl, combine the carrots, apple, lemon juice, honey, almonds, salt and pepper. Toss and chill before serving.
