"A slightly sweet batter makes these crispy rings extra special and delicious! You may want to double or triple the recipe."  Original recipe yield: 4 servings.

INGREDIENTS:

  • 1 quart oil for frying
  • 1 cup dry pancake mix
  • 1 large Spanish onion, sliced into rings

    DIRECTIONS:
  • Heat the oil in a large, deep skillet over medium high heat.
  • Prepare pancake mix according to package directions.
  • One at a time, dip Spanish onion rings into the prepared pancake batter, then into the hot oil. Fry until crispy and browned, about 3 minutes. Drain on paper towels. Editor's Note:We have determined the nutritional value of oil for frying based on a retention value of 10% after cooking. The exact amount may vary depending on cook time and temperature, ingredient density, and the specific type of oil used.
